A wagering requirement (rollover) is how many times you must stake the bonus amount before you can withdraw the winnings tied to it. A $100 bonus with 30x wagering needs $3,000 in bets.

The details in the fine print

Game contribution: slots usually count 100% of the stake toward wagering; roulette and blackjack much less or nothing. Playing the "wrong" game can mean your bet barely counts.

Deadline and max bet: wagering has a deadline (7 days is common) and a bet cap while the bonus is active. Breaking either usually voids the bonus and the winnings.

When it is not worth it

If you just want to play with your own money and withdraw when you like, decline the bonus. With no bonus there is no wagering — winnings are available as soon as the bet settles.
